
Tomato Soup
This familiar and comforting soup is ideal for an autumn or winter lunch, and can be served with a green salad.

1Onion, peeled and finely chopped

2Sticks of celery, finely chopped

2Garlic cloves, peeled and lightly chopped

1Carrot, peeled and finely diced

1 litreWater or vegetable stock

400gCan of chopped tomatoes

1 tspArtificial sweetner
-
200gLow fat natural fromage frais

-Low calorie cooking spray
-
-Salt and freshly ground black pepper

Method

Spray a saucepan with low calorie cooking spray and place over a medium heat. Add the onion, celery, garlic and carrot and stir-fry for 2-3 minutes.

Add the water or stock, tomatoes and sweetner and bring to the boil. Reduce the heat to medium and cook for 15-20 minutes. Remove from the heat, season well and, using a hand-held blender or food processor, blend until smooth. Return the soup to the pan and stir in the fromage frais.

Ladle the soup into warmed bowls and serve immeadiately, garnishing with a little fromage frais and chopped tomatoes.
