Sweetcorn and Coriander Soup

The pasta shapes and sweetcorn make this a really substantial soup, and fresh coriander adds a burst of colour and flavour.

Ingredients for  4  Servings

  • 2 x 400g
    Tins of sweetcorn niblets
  • 50g
    Dried mini pasta shapes
  • 900ml
    Vegetable stock
  • 8
    Spring onions, trimmed and finely sliced
  • 1
    Garlic clove, peeled and crushed
  • ½
    Red pepper, deseeded and very finely diced
  • -
    Large handful of fresh coriander
  • -
    Salt and freshly ground black pepper

    Low calorie cooking spray

Method

  1. Spray a large saucepan with low calorie cooking spray and place over a medium heat. Add the spring onions and garlic and stir-fry for 1-2 minutes.
  2. Pour in the stock, increase the heat to high and add the sweetcorn and red pepper. Bring the mixture to the boil, cover and cook for 10 minutes.
  3. Add the pasta, re-cover and let simmer for 10 minutes. Stir in the chopped coriander, season well and remove from the heat. Ladle into warmed bowls and serve immeadiately.
