
Khumbi Curry
This is a quick and easy curry that uses button mushrooms as the main ingredient.

500gLarge button mushrooms, halved or quartered

110gOnion, peeled and finely grated

4Garlic cloves, peeled and crushed

4 tbspCoriander leaves, chopped

3 tbspLow fat natural yogurt

1 tbspTomato purée

2 tspGinger, peeled and finely grated

2 tspGround coriander

1 tspMild chilli powder

Method

Mix together the ginger, onion and garlic with 4 tablespoons of water in a small bowl and set aside.

Spray a large wok with low calorie cooking spray and place over a high heat. Add the mushrooms and stir-fry for 5-6 minutes or until lightly browned. Transfer the mushrooms to a bowl and set aside. Wipe the wok with sheets of kitchen paper and re-spray with low calorie cooking spray.

Place over a high heat and add the onion mixture. Stir-fry for 3-4 minutes and the add the yogurt, 1 tablespoon at a time. Add the tomato purée and ground coriander and stir-fry for 1 minute before adding 300ml of water, the mushrooms with juices and the chilli powder.

Season well and simmer gently for 5-6 minutes (do not boil). Remove from the heat and stir in the chopped coriander.
Notes
If you prefer, you can use any seasonal mushrooms or dried mushrooms that have been re-hydrated.
