
Egg ‘fried’ rice

125gCold cooked rice

1Spring onion, finely chopped

80gFrozen peas

1 tspReduced salt soy sauce

1Egg

1 tbspRoughly chopped fresh coriander

Method

Tip the rice, spring onions, peas and soy sauce into a microwave-proof bowl and mix well.

Crack the egg into the bowl and stir through, breaking up the yolk and mixing through the rice.

Cover with a piece of kitchen paper and cook on high for 2 minutes, until heated through and the egg is cooked.

Stir half the coriander through the rice, season with salt and pepper and serve with the remaining coriander sprinkled on top.
