Sweet Potato and Spinach Dhal

There's something supremely comforting about a bowl of dhal. Filling, gently spiced and with a gorgeously creamy consistency.

Ingredients for  4  Servings

  • 400g
    Dried red lentils
  • 2
    Medium sweet potatoes, cut into small chunks
  • 2 tsp
    Turmeric
  • 2½cm
    Piece of root ginger, peeled and grated
  • 1 tsp
    Ground cumin
  • 1 tsp
    Ground coriander
  • 1 tsp
    Paprika
  • ½ - 1 tsp
    Chilli powder
  • 4
    Tomatoes, diced
  • 2 tbsp
    Fresh coriander, chopped
  • -
    Large bag baby spinach

Method

  1. Put the lentils, sweet potatoes, turmeric and ginger in your slow cooker and add 1 litre of boiling water. Cover and cook on low for 4 hours or until the lentils are pulpy and the liquid has been absorbed.
  2. Stir in the remaining spices, replace the lid and cook for another 1 hour.
  3. Stir in the spinach, tomatoes, coriander and a little salt to taste. Serve hot.

Notes

Don't have a slow cooker?

1. Put the lentils, sweet potatoes, tumeric, ginger and 1 litre of boiling water into a saucepan.  

2. Simmer over a low heat for about 1 hour, stirring occasionally and adding a little more boiling water if it's getting too thick.

3. Stir in the rest of the spices and simmer for 5 minutes more, then add the spinach, tomatoes and fresh coriander.
