200gPasta shapes

145gTin of tuna in brine, drained

1–1½ tspHarissa paste

1 tspExtra virgin olive oil

½Lemon, zest and juice

Generous handfulFresh flatleaf parsley, roughly chopped

Small handfulPine nuts, toasted

Method

Cook the pasta in a saucepan of boiling salted water for 10–12 minutes or according to packet instructions.

Meanwhile, place the tuna, pine nuts, harissa paste, lemon zest and juice, parsley, oil and a generous few grinds of salt and pepper in a large bowl and stir to combine. Set aside.

Drain the pasta and set aside a little of the cooking water. Return the pasta to the pan and stir in the tuna mixture, adding some of the reserved cooking water if you want a looser sauce. Season with a little more salt and pepper before serving.
