Chargrilled Vegetable & Basil Pasta

Stir this chunky sauce into your favorite pasta for an authentically Mediterranean and seriously satisfying feast.

Ingredients for  4  Servings

  • 500g
    Dried pasta shapes
  • 1
    Courgette, cut into bit sized pieces
  • 1
    Aubergine, cut into bite sized pieces
  • 1
    Red pepper, deseeded and cut into bite sized pieces
  • 1
    Yellow pepper, deseeded and cut into bite sized pieces
  • 1
    Large red onion, roughly chopped
  • 2
    Garlic cloves, crushed
  • 200g
    Passata with onions and garlic
  • -
    Small handful of shredded fresh basil
  • -
    Low calorie cooking spray
  • -
    Salt and freshly ground black pepper

Method

  1. Cook the pasta according to the packet instructions then drain and set aside.
  2. Preheat the grill to medium-high.
  3. Put the courgette, aubergine, peppers, onion and garlic into the grill paan, season well and mix together. Spray lightly with and grill for 10 minutes or until softened and lightly charred, turning the vegetables from time to time. Pick out and set aside any vegetables that cook quicker than the rest.
  4. Meanwhile, heat the passata for 1-2 minutes in a saucepan over a medium heat, Add the grilled vegetables and stir to coat well in the passata.
  5. Stir the vegetables into the pasta, toss gently to mix and scatter over the basil to serve.
