
Bolognese Pasta Bake
Hearty and warming, this beef and pasta dish will soon become a firm family favourite.

Ingredients for 4 Servings

200gDried pasta shapes (Fusilli, Penne or Rigatoni)

1Onion, peeled and finely chopped

2Sticks of celery, finely chopped

1Medium carrot, peeled and finely chopped

3Garlic cloves, peeled and finely sliced

250gMushrooms, roughly chopped
-
500gExtra lean minced beef
-
400gCan of chopped tomatoes

250mlBeef stock
-
1 tspDried oregano
-
6 tbspFinely chopped fresh basil

110gReduced fat mozzarella cheese, diced

-Salt and freshly ground black pepper

Method

Cook the pasta until al dente (tender but still retaining a bite). Drain well.

Place the onion, celery, carrot, garlic, mushrooms and minced beef in a large frying pan and stir fry over a high heat for 6-7 minutes.

Add the tomatoes, stock and oregano and bring to the boil. Season well, cover and cook over a medium heat for 20 minutes, stirring occasionally.

Remove from the heat and stir in the basil.

Spoon half of the bolognese sauce into the base of a medium-sized baking dish and top with the cooked pasta. Spoon over the remaining sauce and sprinkle over the cheese.

Preheat the oven to 180°C/Fan 160°C/Gas 4. Bake in the oven for 20-30 minutes or until bubbling. Remove and serve with wilted spinach or green vegetables.
Notes
Make double the quantity, freeze half and then you'll always have a satisfying supper on stand-by.
