Toad in the Hole

This comforting classic made with sausages of your choice and a simple batter – it’s easy enough that kids can help make it.

    Sausages of your choice
  • 3
    Large eggs
  • 75ml
    Semi-skimmed milk
  • 100g
    Plain flour
  • 400g
    Green beans, trimmed

    Low calorie cooking spray

Method

  1. Preheat the oven to 220°C/Fan 200°C/Gas 7.
  2. Spray a 30cm x 20cm roasting tin with low calorie cooking spray, add the sausages and bake for 10 minutes.
  3. Meanwhile, make the batter. Put the eggs, milk, flour, 75ml cold water and ½ tsp salt into a liquidiser or food processor and blend on high speed for 1 minute (or just gradually whisk the wet ingredients into the dry ones). Set aside.
  4. Turn the sausages, evenly spacing them apart with the palest sides facing up. Quickly pour the batter mixture into the tin and bake for 18-20 minutes or until the batter is golden and the sausages are cooked.
  5. Meanwhile, cook the beans in a saucepan of boiling water over a high heat for 8-10 minutes. Drain well.
  6. Divide the toad between plates and serve with the green beans.
