Royal Chicken (Shahi Murgh)

This chicken dish was once served in the royal Mughal palaces of India. Cooked in yogurt with spices, it is a straightforward yet delicious dish.

Ingredients for  4  Servings

  • 1Kg
    Chicken thighs, skinless
  • 250g
    Low fat natural yogurt
  • 10
    Cardamom pods
  • 8
    Cloves
  • 2
    Cinnamon sticks
  • 3
    Bay leaves
  • 5 tbsp
    Coriander leaves, chopped
  • 2 tsp
    Ground cumin
  • 2 tsp
    Ground coriander
  • ΒΌ tsp
    Mild chilli powder
  • Low calorie cooking spray
  • Salt and freshly ground black pepper

Method

  1. Season the chicken and set aside. Place the yogurt in a bowl and lightly beat until smooth. Season with salt and pepper, then add the cumin, ground coriander, chilli powder, and chopped coriander, mix well and set aside.
  2. Spray a large frying pan liberally with low calorie cooking spray and place over a high heat. Add the cardamom, cloves, cinnamon and bay leaves and fry for 1-2 minutes. Add the chicken in a single layer and brown both sides. Pour over the yogurt mixture, stir well, turn the heat to low, cover tightly and simmer gently for 20-25 minutes, stirring occasionally.
  3. Uncover and cook for a further 3-4 minutes until the sauce thickens and clings to the chicken. Remove from the heat and allow to stand for 5 minutes before serving.
