Minted Lamb Burgers with Radish and Watercress Salad

Bite sized and bursting with flavour, these minted lamb burgers are packed with meaty magic, making the a barbecue essential. The peppery flavours of the radish and watercress salad compliments the lamb perfectly.

Ingredients for  8  Servings

  • 1.2Kg
    Lamb steaks, cut into chunks
  • 1
    Onion, peeled and finely chopped
  • 2
    Garlic cloves, peeled and crushed
  • 2cm
    Piece of root ginger, peeled and grated
  • 2
    Red chillies, deseeded and finely chopped
  • 1 tbsp
    Medium curry powder
  • 2 tbsp
    Low fat natural yogurt
  • 8 tbsp
    Fresh mint, finely chopped

    Finely grated jest and juice of 1 lime

    Low calorie cooking spray

    Salt and freshly ground black pepper
  • For the Salad

  • 500g
    Red radishes
  • 1
    Red onion, peeled, halved and thinly sliced
  • 75g
    Watercress
  • -
    Juice of 1 lemon

Method

  1. Place the lamb in a food processor with the onion, garlic, ginger, red chillies, curry powder, yogurt, lime zest and juice and mint. Season well and blend until well mixed and smooth. Transfer to a bowl, cover and chill for 3-4 hours or overnight if time permits.
  2. Preheat the oven to 180°C/Fan 160°C/Gas 4.
  3. Divide the mixture into 16 portions and form each one into a burger shape. Place on a baking sheet lined with baking parchment and lightly spray with with low calorie cooking spray. Transfer to the oven and cook for 15-18 minutes or until cooked through.
  4. Meanwhile, make the salad by slicing the radishes very thinly and placing them in a bowl with the sliced onion and the lemon juice. Season well and mix together. Toss in the watercress and divide the salad between 8 plates. Top each salad with two burgers and serve immeadiately.

Notes

You can use turkey mince instead of lamb for this recipe.
