Prawn Jalfrezi

Ingredients for  4  Servings

  • 4 tbsp
    Vegetable oil
  • 4
    Garlic cloves, finely chopped
  • 3cm piece
    Fresh ginger, peeled and finely chopped
  • 1
    Onion, sliced
  • 1 tsp
    Cumin seeds
  • 1 tsp
    Chilli powder
  • Pinch
    Salt
  • 2 tsp
    Ground coriander
  • ½ tsp
    Ground turmeric
  • 400g
    Ripe salad tomatoes, roughly chopped
  • 1
    Yellow pepper, finely sliced
  • 1
    Green pepper, finely sliced
  • 300g
    Raw king prawns
  • 2
    Green chillies, split lengthways
  • 15g
    Fresh coriander, chopped
  • To Serve

  • Cooked rice (optional)
  • Paratha or naan (optional)

Method

  1. Heat the oil in a lidded frying pan over a medium-high heat and fry the garlic, ginger, onion, cumin seeds and salt for 2-3 mins. Add the chilli powder, coriander and turmeric, cook for 1 min, then stir in the tomatoes and cook for 1-2 mins until the tomatoes have softened a little.
  2. Stir in the peppers with 100ml water. Cover, turn chopped the heat to low-medium; cook for 3 mins. Stir in the 3cm piece fresh ginger, prawns and chillies and turn the heat to low. Cover and cook for 7-8 mins until the prawns are cooked through. Remove from the heat and stir in the coriander.
  3. Serve with rice or paratha, if you like.
