4Garlic cloves, finely chopped

3cm pieceFresh ginger, peeled and finely chopped

1Onion, sliced

1 tspCumin seeds

2 tspGround coriander

½ tspGround turmeric

400gRipe salad tomatoes, roughly chopped

1Yellow pepper, finely sliced

1Green pepper, finely sliced

300gRaw king prawns

2Green chillies, split lengthways

15gFresh coriander, chopped

Method

Heat the oil in a lidded frying pan over a medium-high heat and fry the garlic, ginger, onion, cumin seeds and salt for 2-3 mins. Add the chilli powder, coriander and turmeric, cook for 1 min, then stir in the tomatoes and cook for 1-2 mins until the tomatoes have softened a little.

Stir in the peppers with 100ml water. Cover, turn chopped the heat to low-medium; cook for 3 mins. Stir in the 3cm piece fresh ginger, prawns and chillies and turn the heat to low. Cover and cook for 7-8 mins until the prawns are cooked through. Remove from the heat and stir in the coriander.
