Virgin Mojito

To get the most from your limes make sure they’re at room temperature, then roll firmly on your work bench pressing with your palm to release as much juice as you can before halving and juicing.

Ingredients for  4-6  Servings

  • 20g
    Bunch of mint
  • 3 tbsp
    Golden caster sugar, plus a little extra to taste if you like
  • 150 ml
    Fresh lime juice
  • 2 handfuls
    Ice
  • 1 Ltr
    Chilled soda water
  • Optional

  • A few lime slices or wedges to serve

Method

  1. Pick the leaves from the mint and put in the base of a large jug. Sprinkle over the sugar, then pour over the lime juice. Use the end of a rolling pin or wooden spoon to muddle everything together, crushing the mint leaves and dissolving the sugar.
  2. Add some ice, then pour over the chilled soda water. Taste – you may like it a little sweeter, if so add pinches of extra sugar. Extra lime wedges (and ice) can be added to glasses for serving, or straight into the jug too.

Notes

This basic mojito recipe can be easily twisted. Try swapping the soda for bitter lemon or elderflower tonic, and adding a handful of frozen berries with the mint leaves.
