Sherry Trifle

This delicious trifle combines jelly, berries, low fat custard and a creamy topping made with fromage frais and quark.

Ingredients for  8  Servings

  • 1 x 12g
    Sugar free raspberry jelly crystals
  • 400ml
    Boiling water
  • 2 tbsp
    Sherry (Vegetarian variety)
  • 450g
    Mixed berries
  • 1 tbsp
    Artificial sweetner
  • 500g
    Low fat custard
  • 250g
    Quark
  • 250g
    Low fat natural fromage frais

  • 1 tsp
    Chocolate vermicelli

Method

  1. Make up the jelly with boiling water and allow to cool. Stir in the sherry.
  2. Place the berries in a medium-sized trifle bowl, sprinkle with the sweetner and mix well.
  3. Pour the cooled jelly mixture over the berries, then cover and chill for 3-4 hours, or until set.
  4. Pour the custard over the set jelly mixture.
  5. Make up the topping by whisking together the quark, fromage frais and sweetner to taste until smooth. Spoon the mixture over the custard, then chill for 2-3 hours before serving topped with the strawberries and sprinkled with chocolate vermicelli.
