Pineapple Mug Cake

This delicious microwave mug cake is ready in under 5 minutes. Turn out onto a plate if you have the patience, or eat straight from the mug! This recipe can be made vegan if you use plant-based milk.

Ingredients to make 1

  • 2 tbsp
    Sunflower oil, plus extra for greasing
  • 5 tbsp
    Self-raising flour
  • 2 tbsp
    Caster sugar
  • 3 tbsp
    Milk (you can use dairy or plant-based milk)
  • ΒΌ tsp
    Mixed spice or cinnamon
  • 8
    Pineapple chunks from a tin
  • 1 tsp
    Icing sugar, to serve

Method

  1. Lightly grease the inside of a microwave-proof mug with the sunflower oil.
  2. Put the flour, sugar, remaining oil, milk and mixed spice in the mug. Mix well with a spoon then stir in the pineapple chunks.
  3. Microwave on high for 2 minutes, or until well risen. Leave to stand for 2 minutes.
  4. Run a knife around the edge of the cake and place a small plate on top of the mug. Invert the cake onto the plate. Sprinkle with sifted icing sugar and serve.
