Ham and Egg Cups

Ingredients to make 4

    Thick slices of ham
  • 4
    Large eggs
  • 4
    Spring onions, sliced
  • 8
    Button mushrooms, roughly chopped
  • 2
    Tomatoes, roughly chopped

    Low calorie cooking spray
  • -
    Salt and freshly ground black pepper

Method

  1. Preheat the oven to 180°C/Fan 160°C/Gas 4.
  2. Spray a frying pan with low calorie cooking spray and place over a high heat. Add the spring onions and mushrooms and stir-fry for 4-5 minutes. Add the tomatoes and stir-fry for 2-3 minutes. Season to taste and remove from the heat.
  3. Light spray four holes of a deep muffin tin with with low calorie cooking spray. Line each hole of the muffin tin with two slices of the ham, gently pressing down to create a cup, and divide the spring onion mixture between them.
  4. Crack an egg over the top of each one, season and cook in the oven for 15-20 minutes until the eggs are cooked to your liking and serve.
