This classic brunch dish of poached eggs served on wilted spinach leaves with slices of ham make an indulgent start to a lazy Sunday.

300gBaby spinach leaves

1Garlic clove, peeled and crushed (Optional)

8 tbspLow fat natural fromage frais

ΒΌ tspMustard

1 tbspTarragon, finely chopped

1 tbspParsley, finely chopped

2 x 50gWholemeal rolls, halved and toasted

4 x 25gLean ham, sliced
-
4Eggs, poached
-
-Low calorie cooking spray
-
-Salt and freshly ground black pepper

Method

Spray a large pan with low calorie cooking spray and place over a medium heat. Add the spinach and garlic, if using, and stir-fry until the spinach has wilted. Season well and keep warm.

In a small saucepan gently heat the fromage frais, mustard and chopped herbs, wisking all the time until warm (take care not to let it boil). Remove, season well and keep warm.

To assemble, place each toasted roll half on a serving plate, cut-side up, and cover with a slice of ham. Divide the spinach mixture between the rolls and top each with a poached egg, Spoon over the sauce and serve immeadiately.
