
Breakfast Spaghetti
This inventive pasta recipe has quite a bit in common with the much loved fry-up.

500gDried spaghetti

12Bacon rashers

3Tomatoes, roughly chopped

4Eggs

100gLow fat natural fromage frais

2 tspDried parsley

-Bunch of spring onions, roughly chopped

-Salt and freshly ground black pepper

Method

Cook the spaghetti according to the packet instructions then drain and set aside.

Heat a large frying pan over a high heat, add the bacon and most of the spring onions and stir-fry for 3-4 minutes. Add the tomatoes and stir-fry for a further 3 minutes or until softened.

Put the eggs in a bowl with the fromage frais, then season and beat or whisk well.

Add the spaghetti to the bacon mixture in the pan. Remove the pan from the heat and stir in the egg mixture. Toss thoroughly so that the eggs thicken in the residule heat, making a creamy sauce that coats the pasta.

Sprinkle over the parsley, remaining onions and serve.
