Sweet Pickled Onions

A step away from traditional pickled onions, these lightly sweet onions or shallots are appetisingly succulent.

Ingredients to make 2 x 500ml Jars

  • 1Kg
    Small pickling onions or shallots
  • 125ml
    White wine vinegar
  • 125ml
    Balsamic vinegar
  • 100g
    Demerara sugar
  • 2 tsp
    Sea salt
  • 4
    Strips pared orange peel (strips of orange peel with no pith)
  • 1-2 tsp
    Fennel seeds
  • 1 tsp
    Pink peppercorns
  • 1 tbsp
    Olive oil
  • 2
    Sprigs rosemary or thyme

Notes

For this recipe you will need two 500ml/18fl oz sterilised jars.

Prepare your jars and lids shortly before you need them. You can do this by putting them through a hot (60°C) dishwasher cycle shortly before you need them (don’t try to dry them with a tea towel, let them air dry) or wash them in hot water then place in an oven preheated to 140°C/Fan 120°C/Gas 1 for 15 minutes (switch off the oven and leave the jars inside until needed).
