This colourful, sharp and sweet-flavoured side dish is ideal served alongside roast pork, goose and game.

1KgRed cabbage

2Cooking apples

2Onions, chopped

1 tspNutmeg, grated

¼ tspGround cloves

¼ tspGround cinnamon

1 tbspSoft dark brown sugar

3 tbspRed wine vinegar

25gButter, diced

-Salt and freshly ground black pepper

Method

Preheat the oven to 160°C/Fan 140°C/Gas 3. Cut away and discard the large white ribs from the outer cabbage leaves using a sharp knife, then finely shred the cabbage. Peel, core and coarsely grate the apples.

Layer the shredded cabbage in a large ovenproof dish with the onions, apples, spices, sugar, and with salt and freshly ground black pepper. Pour over the vinegar and add the diced butter.

Cover the dish with a lid an cook in the preheated oven for about 1½ hours, stirring a couple of times, until the cabbage is very tender. Serve immeadiately, garnished with the parsley.
Notes
This dish can be cooked in advance.Bake the cabbage for 1½ hours, then leave to cool. Store in a cool place covered with clear film. To complete, pre-heat the oven to Preheat the oven to 160°C/Fan 140°C/Gas 3. Bake for about 30 minutes, stirring occasionally.
