Red Cabbage and Apple

This colourful, sharp and sweet-flavoured side dish is ideal served alongside roast pork, goose and game.

    Red cabbage
  • 2
    Cooking apples
  • 2
    Onions, chopped
  • 1 tsp
    Nutmeg, grated
  • ¼ tsp
    Ground cloves
  • ¼ tsp
    Ground cinnamon
  • 1 tbsp
    Soft dark brown sugar
  • 3 tbsp
    Red wine vinegar
  • 25g
    Butter, diced
  • -
    Salt and freshly ground black pepper

Method

  1. Preheat the oven to 160°C/Fan 140°C/Gas 3. Cut away and discard the large white ribs from the outer cabbage leaves using a sharp knife, then finely shred the cabbage. Peel, core and coarsely grate the apples.
  2. Layer the shredded cabbage in a large ovenproof dish with the onions, apples, spices, sugar, and with salt and freshly ground black pepper. Pour over the vinegar and add the diced butter.
  3. Cover the dish with a lid an cook in the preheated oven for about 1½ hours, stirring a couple of times, until the cabbage is very tender. Serve immeadiately, garnished with the parsley.

Notes

This dish can be cooked in advance.Bake the cabbage for 1½ hours, then leave to cool. Store in a cool place covered with clear film. To complete, pre-heat the oven to Preheat the oven to 160°C/Fan 140°C/Gas 3. Bake for about 30 minutes, stirring occasionally.
