Pico de Gallo
This fresh tomato salsa – known as pico de gallo in Mexico – is delicious as a side dish, a topping for tacos, or a dip to serve with tortilla chips. When made with red tomatoes, white onion, coriander and green chilli, it is sometimes called ‘salsa mexicana’ or ‘salsa bandera’, because it has the colours of the Mexican flag.
