
La Simla Mirch Chutney
This extreamely easy red pepper chutney can be prepared in a flash.

1Red pepper, roasted, skinned, deseeded and finely chopped

1Garlic clove, peeled and finely sliced

1Fresh red chilli, deseeded and finely sliced

6 tbspMint leaves, chopped

2 tbspDill, finely chopped

-Juice of 1 lemon

-Salt

Method

Place the red pepper, mint, lemon juice and garlic in a food processor.

Add the chilli, dill and a little salt and blend until fairly smooth, but still a little chunky.

Transfer to a bowl and chill until ready to use.
Notes
Once made it will keep in the fridge for 3-4 days. You can also freeze for up to a month.
