La Simla Mirch Chutney

This extreamely easy red pepper chutney can be prepared in a flash.

Ingredients for  4  Servings

  • 1
    Red pepper, roasted, skinned, deseeded and finely chopped
  • 1
    Garlic clove, peeled and finely sliced
  • 1
    Fresh red chilli, deseeded and finely sliced
  • 6 tbsp
    Mint leaves, chopped
  • 2 tbsp
    Dill, finely chopped

    Juice of 1 lemon
  • -
    Salt

Method

  1. Place the red pepper, mint, lemon juice and garlic in a food processor.
  2. Add the chilli, dill and a little salt and blend until fairly smooth, but still a little chunky.
  3. Transfer to a bowl and chill until ready to use.

Notes

Once made it will keep in the fridge for 3-4 days. You can also freeze for up to a month.
