
Colcannon
This traditional Irish dish is often served at Halloween.

Ingredients for 8 Servings

450gPotatoes, peeled and boiled

450gCurly kale, cooked

50gButter, plus extra for serving

1Large onion, finely chopped

-Salt and freshly ground black pepper

-Milk, if necessary

Method

Mash the potatoes. Chop the kale, add to the potatoes and mix. Stir in a little milk if the mash is too stiff.

Melt a little butter in a frying pan over a medium heat and add the onion. Cook until softened. Remove and mix well with the potato and kale.

Add the remainder of the butter to the hot pan.Turn the potato mixture on to the pan and spread it out. Fry gently for a minute, remove and serve in bowls as a side dish with a knob of butter.
Notes
You can use cabbage or cavolo nero for a variation.
Can be served topped with a fried or poached egg, or with a stew or roast.
