Chicken and Herb Balls

Ingredients to make 16

  • 500g
    Chicken mince
  • 4
    Spring onions, trimmed and very finely chopped
  • 2
    Garlic cloves, peeled and crushed
  • 1
    Red chilli, deseeded and very finely chopped
  • 2 tbsp
    Coriander leaves, very finely chopped
  • 2 tbsp
    Mint leaves, very finely chopped
  • 1 tsp
    Ground coriander
  • 1 tsp
    Ground ginger
  • 1 tsp
    Ground cumin

    Salt and freshly ground black pepper

Method

  1. Place the spring onions, garlic, chicken mince, red chilli, ground spices and chopped herbs into a mixing bowl. Season and, using your fingers, mix thoroughly. Cover and chill for 3-4 hours.
  2. Preheat the oven to 200°C/Fan 180°C/Gas 6. Line a large baking sheet with baking parchment.
  3. Divide the mixture into 16 portions and then shape each portion into a ball. Place the balls on the prepared baking sheet and place in the oven for 20 minutes or until cooked through. Remove from the oven and serve hot, accompanied with a fresh tomato salsa or low fat natural fromage frais, if desired, and lime wedges.
