Cauliflower Cheese

A mature, strong farmhouse cheddar gives an authentic taste to this simple country classic.

    Medium cauliflower
  • 115g
    Mature cheddar cheese, grated
  • 300ml
    Milk
  • 25g
    Plain flour
  • 25g
    Butter
  • -
    Salt and freshly ground black pepper

Method

  1. Trim the cauliflower and cut it into florets. Bring a pan of lightly salted water to the boil, drop in the cauliflower and cook for 5-8 minutes or until just tender. Drain and transfer the florets into an ovenproof dish.
  2. To make the sauce, melt the butter in a pan, stir in the flour and cook gently, for about 1 minute (do not allow it to brown). Remove from the heat and gradually stir in the milk. Return the pan to the heat and cook, stirring, until the mixture thickens, and comes to the boil. Simmer gently for 1-2 minutes.
  3. Stir in three-quarters of the cheese and season to taste. Spoon the sauce over the cauliflower and sprinkle the remaining cheese on top. Put under a hot grill until golden brown.

Notes

Vegetarians - use vegetarian mature cheddar cheese.

For an extra boost of flavour add a little English mustard to the cheese sauce.

Try making this recipe with half cauliflower and half broccoli florets.
