Blue Cheese Coleslaw

Shredded crisp cabbage is tossed into a dressing flavoured with English blue cheese.

Ingredients for  8  Servings

  • 500g
    White cabbage
  • 1
    Medium carrot
  • 1
    Small red onion
  • 2
    Small celery sticks
  • 1
    Crisp eating apple
  • 50g
    Blue cheese
  • 3 tbsp
    Mayonnaise
  • 3 tbsp
    Plain thick yogurt
  • 15ml
    Lemon juice or cider vinegar
  • -
    Salt and freshly ground black pepper

Method

  1. To make the dressing, put the mayonnaise and yogurt into a large bowl and crumble in the cheese. Stir well, adding a squeeze of lemon juice and a little seasoning to taste.
  2. Trim and shred the cabbage finely, grate the carrot, chop the onion finely and cut the celery into very thin slices. Core and dice the apple.
  3. Add the cabbage, carrot, onion, celery and apple to the bowl and toss until all the ingredients are well mixed and coated in the dressing.
  4. Cover the bowl and refridgerate for 2-3 hours or until ready to serve. Stir before serving.

Notes

Use a favourite blue cheese such as Stilton or Oxford Blue. Try using half white and red cabbage.

Serve piled into hot baked potatoes or with roast chicken.
