
Aloo Gobi
A favourite restaurant speciality, this potato and cauliflower dish is gently spiced.

2Large potatoes, peeled and cut into bite-sized pieces

1Cauliflower head, cut into bite-sized florets

1Onion, peeled and finely chopped

2 tspCumin seeds
-
2 tspGround coriander
-
2 tspGaram masala
-
2 tspDried mango powder (Amchoor)

1 tspMild or medium chilli powder

½ tspTurmeric

-Salt

-Low calorie cooking spray

-Coriander leaves, chopped

Method

Spray a large wok with low calorie cooking spray and place over a medium heat. Add the onion to the wok and gently stir-fry for 4-5 minutes until softened. Add the cumin seeds and stir-fry for a further 2-3 minutes.

Add the potatoes and cauliflower and stir-fry over a high heat for 4-5 minutes. Add the chilli powder, tumeric, ground coriander, garam masala and mango powder and stir-fry for 2-3 minutes.

Pour in 200ml of water and season well. Cover and cook gently for 10-15 minutes, or until the cauliflower and potatoes are tender. Season to taste. Remove from the heat and serve garnished with the chopped herbs.
Notes
Makes a great supper when served on a bed of rice with a side salad.
