Aloo Gobi

A favourite restaurant speciality, this potato and cauliflower dish is gently spiced.

    Large potatoes, peeled and cut into bite-sized pieces
  • 1
    Cauliflower head, cut into bite-sized florets
  • 1
    Onion, peeled and finely chopped
  • 2 tsp
    Cumin seeds
  • 2 tsp
    Ground coriander
  • 2 tsp
    Garam masala
  • 2 tsp
    Dried mango powder (Amchoor)
  • 1 tsp
    Mild or medium chilli powder
  • ½ tsp
    Turmeric

    Low calorie cooking spray

Method

  1. Spray a large wok with low calorie cooking spray and place over a medium heat. Add the onion to the wok and gently stir-fry for 4-5 minutes until softened. Add the cumin seeds and stir-fry for a further 2-3 minutes.
  2. Add the potatoes and cauliflower and stir-fry over a high heat for 4-5 minutes. Add the chilli powder, tumeric, ground coriander, garam masala and mango powder and stir-fry for 2-3 minutes.
  3. Pour in 200ml of water and season well. Cover and cook gently for 10-15 minutes, or until the cauliflower and potatoes are tender. Season to taste. Remove from the heat and serve garnished with the chopped herbs.

Notes

Makes a great supper when served on a bed of rice with a side salad.
