Parsley Liquor

This is the recipe for the famous green gravy that is served with London's East End speciality of "Pie, Mash and Liquor".

  • 25g
    Butter
  • 25g
    Plain flour
  • 300ml
    Water
  • 4 tbsp
    Chopped fresh parsley
  • -
    Salt and freshly ground black pepper
  • 1 tsp
    Malt vinegar

Method

  1. Melt the butter in a saucepan. Add the flour and cook for 1 minute.
  2. Gradually add the water. Bring to the boil, stirring continuously. Add the parsley, seasoning and vinegar.
