Avocado Dressing

This creamy textured dressing is actually quite light, and makes a good dressing for salads.

Ingredients to make 450ml

  • 1
    Large ripe avocado, halved and stoned
  • 2 tbsp
    White wine vinegar
  • 3 tbsp
    Olive oil
  • 3 tbsp
    Natural yogurt
  • 1 tbsp
    Fresh lemon juice
  • 3 tbsp or as needed
    Water
  • ½
    Red onion, coarsely chopped
  • 2 tbsp
    Fresh coriander, chopped
  • ¾ tsp
    White pepper
  • ½ tsp or to taste
    Salt

Method

  1. In a bowl combine the vinegar and salt and stir with a fork to dissolve. Stir in the pepper, chopped red onion and olive oil.
  2. Scoop out the avocado flesh into a food processor or blender. Add the lemon juice and onion dressing and process just to blend.
  3. Add the yogurt and water and process until the mixture is smooth. If desired add more water to thin. Taste and adjust the seasoning according to taste.
  4. Spoon the mixture into a bowl. Stir in the coriander.

Notes

This versatile dressing can be served as a sauce with grilled chicken or fish, or use it in sandwiches in place of mayonnaise.
