
Avocado Dressing
This creamy textured dressing is actually quite light, and makes a good dressing for salads.

Ingredients to make 450ml

1Large ripe avocado, halved and stoned

2 tbspWhite wine vinegar

3 tbspOlive oil

3 tbspNatural yogurt

1 tbspFresh lemon juice

3 tbsp or as neededWater

½Red onion, coarsely chopped

2 tbspFresh coriander, chopped

¾ tspWhite pepper

½ tsp or to tasteSalt

Method

In a bowl combine the vinegar and salt and stir with a fork to dissolve. Stir in the pepper, chopped red onion and olive oil.

Scoop out the avocado flesh into a food processor or blender. Add the lemon juice and onion dressing and process just to blend.

Add the yogurt and water and process until the mixture is smooth. If desired add more water to thin. Taste and adjust the seasoning according to taste.

Spoon the mixture into a bowl. Stir in the coriander.
Notes
This versatile dressing can be served as a sauce with grilled chicken or fish, or use it in sandwiches in place of mayonnaise.
