Coconut Oil

Coconut oil is an edible oil derived from the kernels, meat, and milk of the coconut palm tree, a member of the Arecaceae plant family. Coconuts, despite their name, are technically not nuts but drupes (a fruit with a single seed).

Coconut oil is a white solid fat below around 25°C, and a clear thin liquid oil in warmer climates. Unrefined varieties have a distinct coconut aroma. Virgin coconut oil is deemed to be higher quality than refined coconut oil and is said to be richer in antioxidant polyphenols as well as nutrients like vitamin E.

Coconut oil is very good for frying and can be used to fry both high-heat and low-heat cooking.
